Aman's restoration of the 17th-century New Oriental Hotel, right inside the ramparts of Galle Fort. Teak floors, four-poster beds and shuttered verandahs — it's less a hotel than a walk into 1860s colonial Ceylon, with a spa that quietly outperforms anything else within the fort walls.
